This Oude Geuze is a traditional unsweetened, unfiltered Oude Geuze from Lembeek. Brewed from 60% malt and 40% wheat, it is aged under the name Lambiek on oak wood foeders. Oude Geuze consists for 90% of tender lambic of 18 months old, 5% full-bodied beer of 3 years and 5% very young lambic, which provides fermentable sugars and viable yeasts. Mixed in a mixing vessel of 25,000 liters and keep the mixture cool. To bottle we bring the geuze back to fermentation temperature. We place the bottles in an air-conditioned cellar, so that the geuze can be repeated in the bottle. After a few months of aging in the bottles, this geuze gets its fine taste. After this re-fermentation in bottle, it is named Oude Geuze Boon.
