Description
Part of the Bersalis Tripel production ripens on a wooden barrel in the Oud Beersel brewery next to the lambic barrels. Due to the presence of microorganisms in the brewery, the beer undergoes a second fermentation, this time a spontaneous fermentation on wooden barrels by Lactobaccilus and Brettanomyces. After a 14-month maturation on wooden barrels, which originally contained red wine from Chateauneuf du Pape, this second batch of this unique beer was bottled and re-fermented in a bottle for a third time. Ingredients : water, barley and wheat malt, hops, herbs, yeast.
